Holiday Roast Recipe

IRRESISTIBLE IRISH ROAST RECIPE

Serves: 6
Ingredients:
1 (4-pound) boneless beef chuck roast
2 tablespoons olive oil
3 garlic cloves, minced
1 onion, thinly sliced
3 large carrots, peeled and chopped
3 celery stalks, chopped
1 cup beef broth
1 bottle (12 ounces) Irish stout beer
2 tablespoons tomato paste
2 tablespoons Worcestershire sauce
2 sprigs fresh rosemary
3 sprigs fresh thyme
Salt and black pepper, to taste
Instructions:
1. Preheat the oven to 325°F (163°C).
2. Season the beef chuck roast generously with salt and black pepper on all sides.
3. In a large oven-safe Dutch oven, heat the olive oil over medium-high heat. Brown the roast on all sides until a rich golden-brown crust forms, approximately 5 minutes per side. Remove the roast from the pan and set it aside.
4. Reduce the heat to medium and add minced garlic, sliced onion, chopped carrots, and chopped celery to the Dutch oven. Sauté them for 5 minutes until they soften and develop a slight caramelized color.
5. Add beef broth, Irish stout beer, tomato paste, and Worcestershire sauce to the Dutch oven. Stir well to combine.
6. Create a well in the center of the mixture and return the beef chuck roast to the Dutch oven. Nestle the rosemary and thyme sprigs around the roast.
7. Cover the Dutch oven with its lid and transfer it to the preheated oven. Let it roast for approximately 2 hours or until the beef is tender and easily shreds with a fork.
8. Once cooked, carefully remove the Dutch oven from the oven and transfer the roast to a cutting board. Let the roast rest for 10 minutes to allow the juices to redistribute.
9. While the roast is resting, strain the cooking liquid through a fine-mesh sieve, pressing down to extract as much flavor as possible.
10. Slice the roast against the grain and serve it with the strained cooking liquid, which will serve as a delicious gravy. Accompany the roast with roasted potatoes, steamed vegetables, or your desired side dish.
